The team at Domaine Jean Pabiot couldn't hide their excitement when my 
colleagues joined them to taste their new 2025 vintage of Domaine Des Fines 
Caillottes Pouilly-Fumé earlier in the year. They had every right to be 
excited, as 2025 is turning out to be 'the' vintage of the decade for the 
Loire Valley.

The long, hot summer resulted in perfectly ripe fruit and one of the 
earliest harvests on record. Jean Pabiot's vineyards in Pouilly-Fumé side 
stepped what could have been a blot on an otherwise perfect vintage, a 
little hail in July, but thankfully no damage was done and the wonderfully 
warm August finale was the cherry on the top.

The experienced winemaking team at Domaine Pabiot have taken those 
beautifully concentrated sauvignon blanc grapes and produced a very fine 
white wine indeed, with seductive aromas of citrus fruit and gunflint, 
punctuated by a steely crispness and the wonderful flinty nuances that 
lovers of finest Pouilly-Fumé relish.

So it is with near equal excitement to Jean Pabiot and his team, that we 
bring you an exclusive pre-shipment offer for this new release, in both half 
bottles, bottles and magnums at special advance order prices.

Tasting Notes

The perfect 2025 vintage has delivered us an absolutely cracking 
Pouilly-Fumé from the trusted hands of Jean Pabiot and his team.

Straight from the ice bucket and into the glass to reveal a gorgeously 
seductive silvery shimmer. A firm swirl releases vibrant aromas of orchard 
fruit, zesty, freshening citrus, hints of prickly gooseberry, nectarine and 
a subtle smoky/flinty character.

The palate follows the aromatics perfectly; intense, yet perfectly balanced 
flavours of gooseberries, orchard fruit and citrus, hints of nectarine lead 
the charge, evolving to a signature crisp, steely streak with 
gunflint/slatey mineral charm and subtle smokiness on the lengthy finish.

This is a pure, lively and intense expression of Pouilly-Fumé, without 
question one of their best to date, and while drinking wonderfully now, and 
sure to be devoured under this year's summer sun, there's more to come.

I know first hand that there is no rush to pull the cork, Jean Pabiot's 
Pouilly-Fumé are brilliantly made and will mature in the bottle releasing 
more of the sought after minerality and flinty charm.

So - although I personally lack the willpower to do so - if you do manage to 
tuck a few bottles of this fine Pouilly-Fumé away for a year or two then 
well done you!
